Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, baking soda, and salt.
In a separate bowl, combine brown sugar, oil, eggs, and mashed bananas. Mix well.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Stir in cinnamon.
Fill muffin cups about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
These muffins are best served warm. Store leftovers in an airtight container at room temperature for up to 3 days.
