A refreshing and zesty cilantro lime coleslaw perfect for barbecues or as a side dish. This recipe uses a creamy, tangy dressing to coat shredded cabbage and carrots.

  • 1 cup Shredded Carrots

  • 1 cup Mayonnaise
  • 0.25 cup Lime Juice
  • 1 tablespoon Lime Zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • In a large bowl, combine the shredded cabbage and carrots.
  • In a separate bowl, whisk together the mayonnaise, lime juice, lime zest, salt, and pepper.
  • Pour the dressing over the cabbage and carrots and toss to coat evenly.
  • Stir in the chopped cilantro.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a spicier coleslaw, add a pinch of red pepper flakes to the dressing. You can also substitute other herbs like parsley or chives for the cilantro.
