These festive Christmas Pinwheel Cookies are a delightful treat with a vibrant swirl of color and flavor perfect for holiday gatherings.

  • 2.5 cups all-purpose flour sifted
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Preparation Steps

  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Add vanilla extract and mix until incorporated.
  • Gradually add flour and baking powder, mixing until a dough forms.
  • Divide the dough in half. Color one half with red food coloring.
  • Roll each dough into rectangles and layer the colored dough on top of the plain dough.
  • Carefully roll up the dough into a log shape and wrap it in plastic wrap.
  • Chill the dough for at least 30 minutes before slicing.
  • Preheat oven to 350°F (175°C). Slice the dough into 1/4 inch thick cookies.
  • Place cookies on a baking sheet and bake for 10-12 minutes, or until lightly golden.

Notes

For an extra festive touch, roll the edges of the cookies in colored sugar before baking.
