Chocolate Oat Balls with Peanut Butter

These no-bake chocolate oat balls combine oats, nuts, seeds, peanut butter, maple syrup, and melted chocolate.

  • 1/4 cup walnuts finely chopped
  • 1/4 cup natural peanut butter
  • 1/4 cup pure maple syrup
  • 1/3 cup vegan chocolate chips
  • 1/2 cup old-fashioned rolled oats
  • 2 tablespoons ground flaxseed
  • 2 tablespoons sunflower seeds
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt

  • Chop or crush the walnuts into very small pieces.
  • Heat the peanut butter and maple syrup in a small pan over medium-low heat for about 3 minutes, stirring until melted and combined.
  • Add the walnuts, chocolate chips, oats, flaxseed, sunflower seeds, vanilla, and salt. Stir for 1 to 2 minutes until the chocolate melts and the mixture is uniform.
  • Remove the pan from the heat and cool the mixture for about 10 minutes.
  • Shape the mixture into ten 1.5-inch balls using about 2 tablespoons for each.
  • Serve while soft or chill in a sealed container until firm.
