chocolate banana muffins

A delicious combination of rich chocolate and ripe bananas baked into moist muffins, perfect for breakfast or a snack.

  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 medium bananas mashed
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 0.25 cup unsweetened baking cocoa

Preparation Steps

  • In a large mixing bowl, beat butter with sugar until creamy. Add egg and vanilla. Add mashed banana.
  • Add flour, baking powder, baking soda, and salt. Divide batter in half.
  • To one half of the batter, mix in the baking cocoa.
  • Prepare muffin tin by greasing. Drop 2 tablespoons of plain batter into each muffin cup. Then add 2 tablespoons of chocolate batter into each muffin cup. Bake at 350°F for 16-18 minutes.
