  • 1.5 cups chickpea flour also known as garbanzo bean flour
  • 0.5 cup cornstarch
  • 1 tablespoon mixed dried herbs such as oregano, basil
  • 1 teaspoon salt kosher salt preferred
  • 0.5 teaspoon black pepper freshly ground
  • 1.25 cups warm water
  • 6 tablespoons olive oil extra virgin, divided
  • 2 ounces grated Parmesan cheese finely grated
  • 1 cup cherry tomatoes halved
  • 6 ounces mozzarella cheese shredded

Preparation Steps

  • In a large bowl, blend chickpea flour, cornstarch, dried herbs, salt, and pepper.
  • Slowly add water and 2 tablespoons of olive oil to the mixture, stirring until smooth.
  • Integrate grated Parmesan into the batter.
  • Allow the batter to rest for a few minutes.
  • Preheat the oven broiler to high. Heat 2 tablespoons of olive oil in each of two 10-inch skillets over medium-high.
  • Distribute the batter equally between the skillets, spreading evenly.
  • Top with cherry tomatoes and mozzarella. Season with additional herbs and pepper.
  • Cover and cook for 8 minutes, till set and lightly browned.
  • Uncover and move to broiler for 3 minutes until cheese is golden.
  • Cool briefly before cutting and serving.
