Instructions
Preparation Steps
In a large bowl, blend chickpea flour, cornstarch, dried herbs, salt, and pepper.
Slowly add water and 2 tablespoons of olive oil to the mixture, stirring until smooth.
Integrate grated Parmesan into the batter.
Allow the batter to rest for a few minutes.
Preheat the oven broiler to high. Heat 2 tablespoons of olive oil in each of two 10-inch skillets over medium-high.
Distribute the batter equally between the skillets, spreading evenly.
Top with cherry tomatoes and mozzarella. Season with additional herbs and pepper.
Cover and cook for 8 minutes, till set and lightly browned.
Uncover and move to broiler for 3 minutes until cheese is golden.
Cool briefly before cutting and serving.
