  • 1.5 pounds chicken breast sliced into strips
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice rinsed
  • 3 cups chicken broth
  • 1 cup Parmesan cheese grated
  • 4 cloves garlic minced
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper
  • 1 tablespoon butter

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until browned and cooked through.
  • Remove chicken from skillet and set aside. In the same skillet, melt butter and sauté garlic until fragrant.
  • Add rice to the skillet, stirring to coat with butter and garlic. Pour in chicken broth and bring to a boil.
  • Reduce heat to a simmer, cover, and cook for 20 minutes or until rice is tender.
  • Stir in Parmesan cheese, salt, and pepper. Return chicken to the skillet and heat through before serving.

Notes

Garnish with chopped parsley for added freshness and color.
