Chicken with Creamed Spinach Bacon Mushrooms

This delicious recipe combines tender chicken with a creamy spinach, bacon, and mushroom sauce, perfect for a comforting weeknight meal.

Main Ingredients

  • 1.5 pounds chicken breasts boneless, skinless
  • 4 slices bacon diced
  • 1 cup mushrooms sliced
  • 3 cups spinach fresh
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • In a large skillet, heat olive oil over medium heat. Cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add bacon and cook until crisp. Remove and set aside.
  • Add mushrooms to the skillet and sauté until browned, about 5 minutes. Stir in the spinach and cook until wilted.
  • Pour in the heavy cream and bring to a simmer. Season with salt and pepper to taste.
  • Return chicken and bacon to the skillet. Simmer for an additional 5 minutes. Serve hot.

Notes

Garnish with freshly grated Parmesan cheese for additional flavor.
