Instructions
Preparation Steps
In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the chicken and cook until browned on all sides.
Add the onion and garlic to the pot and cook until softened, about 5 minutes.
Stir in the diced tomatoes, black beans, corn, chicken broth, and taco seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.
Serve hot, topped with tortilla strips.
Notes
Optional toppings include shredded cheese, sour cream, avocado, and lime wedges.
