Chicken Tortilla Soup

A hearty and flavorful soup packed with chicken, vegetables, and topped with crispy tortilla strips.

  • 1.5 lb Boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 medium Yellow onion diced
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes 14.5 oz, undrained
  • 1 can Black beans 15 oz, rinsed and drained
  • 1 can Corn 15 oz, drained
  • 4 cups Chicken broth
  • 1 packet Taco seasoning
  • 1 cup Tortilla strips for topping

Instructions
 

Preparation Steps

  • In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the chicken and cook until browned on all sides.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the diced tomatoes, black beans, corn, chicken broth, and taco seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Serve hot, topped with tortilla strips.

Notes

Optional toppings include shredded cheese, sour cream, avocado, and lime wedges.
