Chicken Ramen Stir Fry with Crisp Vegetables

Ingredients
- 3 packages instant ramen noodles discard seasoning packets
- 1 lb boneless skinless chicken breast thinly sliced
- 2 tbsp neutral cooking oil divided
- 1 cup broccoli florets small florets
- 1 red bell pepper thinly sliced
- 1/2 yellow onion thinly sliced
- 3 cloves garlic minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp toasted sesame oil
- 2 green onions sliced
- 1 tbsp sesame seeds for serving
Instructions
Cook the ramen noodles according to the package directions until just tender. Drain, rinse briefly under cool water, and set aside.
Whisk the soy sauce, hoisin sauce, rice vinegar, honey, and sesame oil together in a small bowl.
Heat one tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until browned and cooked through, about 5 to 6 minutes. Transfer it to a plate.
Add the remaining oil to the skillet. Stir-fry the broccoli, bell pepper, and onion for 3 to 4 minutes, until crisp-tender. Add the garlic and cook for 30 seconds.
Return the chicken to the skillet and add the drained noodles. Pour in the sauce and toss constantly for 2 to 3 minutes, until everything is hot and coated.
Serve immediately with green onions and sesame seeds, if using.
