Chicken Ramen Stir Fry with Crisp Vegetables

  • 3 packages instant ramen noodles discard seasoning packets
  • 1 lb boneless skinless chicken breast thinly sliced
  • 2 tbsp neutral cooking oil divided
  • 1 cup broccoli florets small florets
  • 1 red bell pepper thinly sliced
  • 1/2 yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 2 green onions sliced
  • 1 tbsp sesame seeds for serving

  • Cook the ramen noodles according to the package directions until just tender. Drain, rinse briefly under cool water, and set aside.
  • Whisk the soy sauce, hoisin sauce, rice vinegar, honey, and sesame oil together in a small bowl.
  • Heat one tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until browned and cooked through, about 5 to 6 minutes. Transfer it to a plate.
  • Add the remaining oil to the skillet. Stir-fry the broccoli, bell pepper, and onion for 3 to 4 minutes, until crisp-tender. Add the garlic and cook for 30 seconds.
  • Return the chicken to the skillet and add the drained noodles. Pour in the sauce and toss constantly for 2 to 3 minutes, until everything is hot and coated.
  • Serve immediately with green onions and sesame seeds, if using.
