A hearty and flavorful Hungarian chicken paprikash recipe. This dish features tender chicken simmered in a rich paprika sauce with onions, peppers, and tomatoes.
In a large pot or Dutch oven, brown chicken thighs over medium-high heat.
Add onion and bell pepper; cook until softened.
Stir in paprika and caraway seeds; cook for 1 minute.
Add chicken broth, diced tomatoes, and tomato paste. Bring to a simmer, then reduce heat and cover. Cook for 30-40 minutes, or until chicken is cooked through.
Serve hot, topped with sour cream (optional).
Notes
For a richer flavor, use bone-in, skin-on chicken thighs. You can also add other vegetables, such as carrots or potatoes.
