Chicken Fried Rice Recipe

This Chicken Fried Rice is a delicious and easy-to-make dish that's perfect for a quick dinner.

  • 2 cups cooked rice preferably leftover rice
  • 1 lb chicken breast diced
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 cup frozen peas and carrots
  • 2 eggs beaten
  • 2 cloves garlic minced

Preparation Steps

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  • Add diced chicken breast and cook until browned and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, heat another tablespoon of oil and add the minced garlic. Cook for 1 minute.
  • Add the beaten eggs and scramble until fully cooked.
  • Stir in the cooked rice, soy sauce, and frozen peas and carrots. Cook for a few minutes until the vegetables are tender.
  • Add the cooked chicken back into the skillet and stir well to combine.

Notes

Feel free to add more vegetables or adjust seasoning to suit your taste.
