  • 1.5 pounds chicken breast diced
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can diced tomatoes 14.5 ounces
  • 1 can black beans drained and rinsed

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until onions are tender.
  • Add chicken breast and cook until browned.
  • Stir in cumin, chili powder, tomatoes, and beans. Bring to a boil, then reduce heat and simmer for 45 minutes.
