Chicken Caesar Pasta Salad

A quick and easy chicken Caesar pasta salad that's perfect for a light lunch or side dish.

Ingredients

  • 1.5 pound cooked chicken breast chopped
  • 12 ounce rotini pasta cooked and drained
  • 2 cup romaine lettuce chopped
  • 0.5 cup parmesan cheese shredded
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced

Caesar Dressing

  • 0.75 cup mayonnaise
  • 2 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 2 cloves garlic minced
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large bowl, combine the cooked chicken, rotini pasta, chopped romaine lettuce, shredded parmesan cheese, halved cherry tomatoes, and thinly sliced red onion.
  • In a separate small bowl, whisk together the mayonnaise, lemon juice, Worcestershire sauce, Dijon mustard, minced garlic, and black pepper until well combined. This is your Caesar dressing.
  • Pour the Caesar dressing over the ingredients in the large bowl. Toss gently to coat everything evenly.
  • Serve immediately or cover and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with extra parmesan cheese if desired.

Notes

This salad is a great make-ahead dish. The longer it sits, the better the flavors become!
