  • 0.75 cup frozen pitted cherries
  • 0.5 medium cooked beet peeled, chopped
  • 0.5 cup unsweetened almond milk or other plant-based milk
  • 1 tablespoon lime juice from about 0.5 lime
  • 1 tablespoon maple syrup or honey, adjust to taste
  • 0.5 inch fresh ginger peeled, optional
  • 0.25 cup water or more, for desired consistency
  • 0.25 cup ice cubes optional, for extra chill

Preparation Steps

  • Combine all ingredients in a high-speed blender: frozen cherries, cooked beet, almond milk, lime juice, maple syrup, ginger (if using), water, and ice cubes (if using).
  • Blend on high until completely smooth and creamy. If the smoothie is too thick, add more water or milk 1 tablespoon at a time until desired consistency is reached.
  • Taste and adjust sweetness or tartness as needed. Add more maple syrup for sweetness or more lime juice for tartness.

Notes
