  • 4 cups shredded mozzarella cheese

Cheese Sauce

  • 6 tablespoons butter unsalted
  • 1 medium red onion diced
  • 6 cloves garlic minced
  • 0.25 cup all-purpose flour
  • 5 cups whole milk divided
  • 0.5 cup cream cheese softened
  • 3 cups shredded cheddar cheese
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch casserole dish.
  • In a large skillet, melt butter over medium heat. Add onions and garlic, sauté until onions are translucent.
  • Stir in the flour and cook for 1 minute. Gradually add 4 cups of whole milk, whisking until smooth and thickened.
  • Lower the heat and add cream cheese, stirring until well-combined. Remove from heat and add cheddar cheese, stirring until melted.
  • In a large mixing bowl, combine cooked rice, chicken, broccoli, and cheese sauce. Mix until everything is well coated.
  • Transfer the mixture to the prepared casserole dish. Top with shredded mozzarella cheese.
  • Bake for 30-35 minutes or until the top is bubbling and golden brown. Let stand for 10 minutes before serving.
