  • 1 head cauliflower cut into bite-sized florets
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2.5 cups heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried oregano
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 cup grated Parmesan cheese divided
  • 1.5 cups shredded mozzarella cheese divided
  • 2 tablespoons fresh chives chopped, for garnish

Preparation Steps

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or nonstick spray.
  • Bring a large pot of salted water to a boil. Add cauliflower and cook for 5-7 minutes until tender-crisp. Drain well and place in baking dish.
  • In a saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • Whisk together heavy cream, flour, oregano, salt, and pepper in a bowl. Pour into the saucepan and stir continuously until it thickens.
  • Stir in 3/4 cup Parmesan cheese until melted. Pour sauce over cauliflower and top with 1 cup mozzarella and remaining Parmesan.
  • Bake for 20-25 minutes until cheese is golden and bubbly. Let it rest for 5 minutes before garnishing with chives.

Notes

Ensure all ingredients are gluten-free if necessary. Adjust cooking time based on oven variations. Store leftovers in the fridge for up to 3 days.
