Carrot Cake Loaf

A moist and delicious carrot cake loaf, perfect for breakfast or a snack. Easy to make and packed with flavor.

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups shredded carrots
  • 1 cup chopped walnuts
  • 1 cup cream cheese frosting

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, combine sugar, eggs, and oil. Beat until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the carrots and walnuts.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Frost with cream cheese frosting.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
