Caprese Egg Bake

A delicious and easy Caprese Egg Bake recipe, perfect for brunch or a light dinner. Bursting with fresh mozzarella, juicy tomatoes, and fragrant basil.

  • 6 large eggs
  • 1 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 4 ounces fresh mozzarella sliced
  • 1 cup fresh basil leaves

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a small baking dish.
  • In a bowl, whisk together eggs, heavy cream, salt, and pepper.
  • Arrange half of the tomatoes and mozzarella in the baking dish.
  • Pour the egg mixture over the tomatoes and mozzarella.
  • Top with remaining tomatoes, mozzarella, and basil leaves.
  • Bake for 20-25 minutes, or until the eggs are set and the cheese is melted and bubbly.

Notes

Serve immediately. Garnish with extra basil if desired.
