  • 1 medium Butternut Squash
  • 1 cup Cooked Quinoa
  • 0.5 cup Chopped Onion
  • 1 teaspoon Ground Sage

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Cut the butternut squash in half, remove seeds, and roast until tender.
  • While squash roasts, sauté onion and then mix with quinoa, sage and other desired seasonings.
  • Fill the roasted squash halves with the quinoa mixture.
  • Bake for another 20 minutes, or until heated through.
