Preparation Steps
Preheat oven to 375°F (190°C).
Cut the butternut squash in half, remove seeds, and roast until tender.
While squash roasts, sauté onion and then mix with quinoa, sage and other desired seasonings.
Fill the roasted squash halves with the quinoa mixture.
Bake for another 20 minutes, or until heated through.
