Butter Pecan Cookies

Delicious and nutty butter pecan cookies with a crispy edge and soft center.

  • 1 cup butter softened
  • 1 cup pecans chopped
  • 1 cup sugar
  • 2 cups all-purpose flour sifted
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Stir in vanilla and then gradually mix in the flour.
  • Fold in chopped pecans.
  • Drop dough by spoonfuls onto a parchment-lined baking sheet.
  • Bake for 12 minutes, or until the edges are golden brown.

Notes

For extra flavor, toast pecans prior to adding them to the dough.
