Preparation Steps
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour and salt. Gradually add to the wet ingredients, mixing until just combined.
Divide the dough in half. Shape each half into a log, about 1.5 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 375°F (190°C). Slice the chilled dough into 0.25-inch thick rounds.
Place cookies on ungreased baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
