  • 1.5 cups cornstarch
  • 3 tablespoons paprika
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 3 large eggs beaten
  • 2 cups canola oil for frying

Buffalo Sauce

  • 0.5 cup spicy buffalo sauce
  • 2 tablespoons butter melted
  • 1 tablespoon minced onion

Preparation Steps

  • Set up the breading station by mixing cornstarch, paprika, salt, and pepper in a shallow dish. Beat eggs in a separate bowl.
  • Dip each chicken piece in the eggs, allowing the excess to drip off, then coat with the cornstarch mixture.
  • Heat the canola oil in a deep skillet until it reaches 350°F. Fry the chicken pieces in batches until golden brown and crispy.
  • Drain the chicken on paper towels to remove excess oil.
  • For the buffalo sauce, combine the spicy buffalo sauce, melted butter, and minced onion in a bowl.
  • Toss the fried chicken bites with the buffalo sauce to coat evenly or serve the sauce on the side.

Notes

Serve with celery sticks and blue cheese dressing for a classic pairing. Adjust the spice level by using a milder buffalo sauce if desired.
