Buckeye Brownie Bites

Make fudgy buckeye brownie bites with a creamy peanut butter center and chocolate drizzle for an easy bite-sized dessert.

  • 1/2 cup peanut butter smooth
  • 2 tablespoons butter softened
  • 3/4 cup powdered sugar
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips melted

  • Heat the oven to 350°F and line a mini muffin pan with paper liners.
  • Mix peanut butter, softened butter, and powdered sugar until smooth; shape into small balls and chill briefly.
  • Whisk oil, sugar, vanilla, and eggs. Stir in flour, cocoa, and salt just until combined.
  • Fill each liner with brownie batter and press a peanut butter ball into the center.
  • Bake for 15 to 20 minutes, until the brownie edges are set and the centers look fudgy.
  • Cool, then drizzle with melted chocolate and let the topping set.

Notes

Cool completely before moving the bites so the fudgy centers hold their shape.
