Bruschetta Chicken

A delicious and flavorful chicken breast dish topped with a fresh tomato, basil, and garlic bruschetta mixture, perfect for a quick weeknight dinner.

  • 4 breasts boneless, skinless chicken breasts
  • 0.5 cup cherry tomatoes, diced
  • 0.25 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil, divided
  • 1 teaspoon balsamic vinegar
  • 1 pinch Salt and black pepper to taste
  • 0.25 cup grated Parmesan cheese (optional)
  • 1 tablespoon butter

Preparation Steps

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Season both sides of the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  • While the chicken bakes, prepare the bruschetta topping. In a small bowl, combine diced cherry tomatoes, chopped basil, minced garlic, remaining 1 tablespoon olive oil, balsamic vinegar, salt, and pepper. Stir well and set aside.
  • Remove the chicken from the oven. Top each chicken breast evenly with the bruschetta mixture. Sprinkle with Parmesan cheese if using. Return the skillet to the oven for 2-3 minutes to warm the topping.
  • Serve the bruschetta chicken hot, optionally garnished with extra basil leaves.
