Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Season both sides of the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken bakes, prepare the bruschetta topping. In a small bowl, combine diced cherry tomatoes, chopped basil, minced garlic, remaining 1 tablespoon olive oil, balsamic vinegar, salt, and pepper. Stir well and set aside.
Remove the chicken from the oven. Top each chicken breast evenly with the bruschetta mixture. Sprinkle with Parmesan cheese if using. Return the skillet to the oven for 2-3 minutes to warm the topping.
Serve the bruschetta chicken hot, optionally garnished with extra basil leaves.
