Brownie Refrigerator Cake

A decadent no-bake cake layered with rich brownies and creamy filling, perfect for any occasion.

Ingredients
  

Brownie Base

  • 0.5 cup butter
  • 1 cup granulated sugar
  • 0.5 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Creamy Filling

  • 1 package cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 cup heavy cream, whipped
  • 0.5 cup chocolate chips divided

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, cream together melted butter and granulated sugar.

  • Beat in eggs one at a time, then stir in vanilla extract.

  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.

  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Spread batter evenly into the prepared baking pan.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let brownies cool completely in the pan.
  • While brownies cool, prepare the filling: In a medium bowl, beat together softened cream cheese and powdered sugar until smooth.

  • Fold in whipped heavy cream and half of the chocolate chips.

  • Once brownies are completely cool, spread the cream cheese mixture evenly over the top.
  • Sprinkle the remaining chocolate chips over the top.

  • Refrigerate for at least 2 hours before slicing and serving.

Notes

For an extra rich flavor, you can add a tablespoon of instant coffee to the brownie batter.
