Instructions
Preparation Steps
Melt butter in a large pot over medium heat. Add potatoes and cook until softened, about 5-7 minutes.
Add broccoli florets and cook for another 3 minutes.
Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
Stir in milk and cheese until melted and smooth. Season with salt and pepper to taste.
Notes
For a richer flavor, use heavy cream instead of milk. You can also add other vegetables, such as carrots or celery.
