Broccoli Potato Soup

  • 1 lb potatoes
  • 1 lb broccoli florets
  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Preparation Steps

  • Melt butter in a large pot over medium heat. Add potatoes and cook until softened, about 5-7 minutes.
  • Add broccoli florets and cook for another 3 minutes.
  • Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
  • Stir in milk and cheese until melted and smooth. Season with salt and pepper to taste.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add other vegetables, such as carrots or celery.
