Ingredients
- 6 slices bacon chopped
- 4 large eggs
- 1/4 tsp kosher salt
- 1/4 tsp ground pepper
- 2 tbsp butter
- 1 medium white onion diced
- 2 cloves garlic minced
- 3 cups cold cooked rice
- 3 tbsp soy sauce
- 2 tsp toasted sesame oil
- 1 cup frozen peas and carrots
- 1/2 cup frozen corn
- 4 green onions sliced
Instructions
Line a plate with paper towels.
Cook the bacon in a cold 12-inch skillet or wok over medium heat until crisp, about 10 minutes. Transfer it to the prepared plate and leave 2 tablespoons bacon fat in the pan.
Beat the eggs with the salt and pepper. Add them to the skillet, scramble until just set, then transfer them to a bowl.
Increase the heat to medium-high. Melt the butter, then sauté the onion until translucent, 5 to 6 minutes. Add the garlic and cook until fragrant, about 1 minute.
Add the rice and toss with the onion and garlic. Spread it into an even layer and fry undisturbed for 4 to 5 minutes.
Pour in the soy sauce, loosen the rice, and stir. Add the frozen vegetables and sesame oil; toss until hot and the rice looks dry.
Remove from the heat and fold in the bacon, scrambled eggs, and green onions. Serve immediately.
