Ingredients
  

  • 1 ½ cups old-fashioned rolled oats
  • ½ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup coconut oil melted
  • cup maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup milk of choice
  • 1 cup fresh or frozen blueberries

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8 baking dish with parchment paper.
  • In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
  • In another bowl, whisk together melted coconut oil, maple syrup, egg, vanilla, and milk.
  • Combine wet and dry ingredients until fully incorporated.
  • Gently fold in the blueberries.
  • Spread mixture evenly in the baking dish.
  • Bake for 30-35 minutes until golden and set.
  • Cool for 5 minutes, then slice into bars and serve.

Notes

You can substitute the maple syrup with honey if preferred. Use dairy-free milk to make it vegan. Store leftovers in an airtight container for up to 4 days or freeze for longer storage.
