  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries fresh or frozen

  • Heat the oven to 375°F and line a 12-cup muffin tin.
  • Whisk flour, sugar, baking powder, and salt in a bowl.
  • Whisk melted butter, eggs, milk, and vanilla in a second bowl.
  • Fold the wet mixture into the dry ingredients just until combined, then gently fold in the blueberries.
  • Divide batter among the cups and bake 20 to 22 minutes, until golden and a toothpick comes out with a few moist crumbs.
  • Cool in the tin for 5 minutes, then transfer to a rack.
