Blueberry Almond Delight Bars

  • 4.5 cups all-purpose flour sifted
  • 1.5 cups granulated sugar divided
  • 1.5 cups unsalted butter chilled and cubed
  • 3 large eggs beaten separately
  • 2 tsp almond extract
  • 2 cups fresh blueberries washed and dried
  • 1 cup sliced almonds for topping

Preparation Steps

  • Preheat your oven to 350°F. Grease and line a 13x9 inch baking pan with parchment paper.
  • In a large bowl, combine flour and 1 cup of sugar. Add cubed butter, then use your fingers to mix until the texture resembles coarse crumbs.
  • Incorporate the beaten eggs and almond extract into the flour mixture until a dough forms. Press evenly into the prepared baking pan.
  • Bake for 15 minutes or until the edges start to turn golden brown.
  • Spread fresh blueberries evenly over the partially baked base and sprinkle with the remaining sugar.
  • Whisk remaining eggs in a clean bowl. Pour over the blueberries and sprinkle with sliced almonds.
  • Bake for an additional 25 minutes or until the top is golden and set. Cool completely before cutting into bars.

Notes

For a nut-free option, omit the almonds and increase the blueberries. Store in an airtight container for up to 4 days.
