  • 1 lb penne pasta or any pasta of choice
  • 2 tbsp olive oil
  • 1.5 lb chicken breasts boneless and skinless
  • 3 cloves garlic minced
  • 1 cup grated Parmesan cheese plus extra for serving
  • 2 cup heavy cream
  • 2 tsp Cajun seasoning use more to taste
  • 1 tbsp butter
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground

Preparation Steps

  • Cook the pasta in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.
  • Heat olive oil in a skillet over medium-high heat. Season chicken breasts with Cajun seasoning and add them to the skillet. Cook for about 5-7 minutes on each side or until golden and cooked through. Remove and set aside.
  • In the same skillet, melt butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
  • Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until it melts and sauce thickens. Season with salt and pepper.
  • Mix the pasta and sauce together. If needed, add reserved pasta water until desired consistency is reached.
  • Slice the cooked chicken and serve on top of the pasta. Garnish with extra Parmesan and freshly chopped parsley if desired.

Notes

Consider serving with a side of garlic bread or a fresh green salad.
