Ingredients
  

  • 8 large eggs
  • 1 cup 0.5 lb cottage cheese or Greek yogurt
  • ½ cup 0.12 lb shredded Gruyère or cheddar cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • 1 tablespoon melted butter or olive oil

Optional Add-Ins:

  • ¼ cup 0.06 lb cooked, crumbled bacon or sausage
  • ¼ cup 0.06 lb diced bell peppers
  • 2 tablespoons chopped spinach
  • Chopped herbs like chives or parsley

Instructions
 

  • Step 1: Preheat the Oven
  • Preheat your oven to 300°F (150°C). Place a baking dish filled with about 1 inch of water on the bottom rack to create a water bath.
  • Step 2: Blend the Egg Mixture
  • In a blender, combine the eggs, cottage cheese, shredded cheese, salt, pepper, and garlic powder. Blend on high for 30 seconds until smooth and frothy.
  • Step 3: Add to Muffin Tin
  • Spray a 12-cup muffin tin with non-stick cooking spray. If using add-ins, divide them evenly among the muffin cups.
  • Pour the egg mixture evenly into the muffin cups, filling them about ¾ full.
  • Step 4: Bake the Egg Bites
  • Carefully place the muffin tin on the middle rack of the oven, directly above the water bath. Bake for 25–30 minutes, or until the egg bites are set and slightly puffed.
  • Step 5: Cool and Serve
  • Remove the egg bites from the oven and let them cool slightly before removing them from the tin.
  • Serve warm, or store for later in the fridge or freezer.
