  • 4 large sweet potatoes scrubbed and cleaned
  • 2 tablespoons olive oil divided
  • 1 cup feta cheese crumbled
  • 2 cups spinach fresh, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • Place the sweet potatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Bake for 45-50 minutes or until tender.
  • While the sweet potatoes are baking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped spinach and sauté until wilted.
  • Once the sweet potatoes are cooked, let them cool slightly. Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a thin layer to maintain structure.
  • Mix the scooped-out sweet potato flesh with cooked spinach, crumbled feta, salt, pepper, and garlic powder.
  • Stuff the mixture back into the sweet potato skins, dividing evenly among them.
  • Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through and slightly golden on top.

Notes

Serve warm with a sprinkle of fresh parsley for an added touch.
