Stuffed sweet potatoes with spinach and feta make a delicious and healthy meal option. They are perfect for a nutritious lunch or a light dinner, packed with flavor and easy to prepare.
Place the sweet potatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Bake for 45-50 minutes or until tender.
While the sweet potatoes are baking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped spinach and sauté until wilted.
Once the sweet potatoes are cooked, let them cool slightly. Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a thin layer to maintain structure.
Mix the scooped-out sweet potato flesh with cooked spinach, crumbled feta, salt, pepper, and garlic powder.
Stuff the mixture back into the sweet potato skins, dividing evenly among them.
Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until heated through and slightly golden on top.
Notes
Serve warm with a sprinkle of fresh parsley for an added touch.
