  • 1 15-ounce can cannellini beans drained and rinsed
  • 3 tablespoons chili powder
  • 1 teaspoon cumin ground
  • 1 teaspoon oregano dried
  • 0.5 teaspoon cayenne pepper or to taste

Preparation Steps

  • Heat the canola oil in a large pot over medium-high heat. Once hot, add the ground turkey and spread it evenly. Cook without stirring for about 6-7 minutes to form a crust.
  • Break the turkey into crumbles, stirring occasionally until no longer pink, about 5 minutes more. Drain excess fat if necessary.
  • Add the carrots, red onions, and garlic to the pot. Sauté for 8 minutes until the vegetables have softened.
  • Stir in the diced tomatoes, tomato paste, and chicken broth. Mix until well combined.
  • Add the black beans and cannellini beans along with the chili powder, cumin, oregano, and cayenne pepper. Season with salt and pepper.
  • Bring the mixture to a boil, then reduce to a simmer. Cover partially and allow it to simmer for 1 to 1.5 hours, stirring occasionally.
  • Taste and adjust seasoning if needed. Serve hot with optional toppings like shredded cheese or sour cream.

Notes
