Best Blueberry French Toast Casserole

This Best Blueberry French Toast Casserole is a rich, comforting breakfast dish made with sweet blueberries, fluffy bread, and a luscious custard. It’s easy to prep ahead and perfect for a weekend brunch or holiday breakfast.

Ingredients
  

  • 1 loaf French bread cut into 1-inch cubes
  • 2 cups fresh or frozen blueberries
  • 8 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Butter or non-stick spray for greasing
  • Maple syrup or powdered sugar optional topping

Instructions
 

  • Grease a 9x13-inch baking dish.
  • Cut the bread into cubes and place half in the dish.
  • Sprinkle with half the blueberries.
  • Add the remaining bread and top with the rest of the blueberries.
  • In a bowl, whisk together eggs, milk, cream, sugar, vanilla, and cinnamon.
  • Pour the custard mixture evenly over the bread.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Preheat oven to 350°F (175°C).
  • Bake uncovered for 45 minutes or until golden brown.
  • Let rest 10 minutes before serving. Optional: top with maple syrup or powdered sugar.

Notes

For best results, let the casserole soak overnight. You can swap blueberries with raspberries or chopped strawberries. Great to make ahead for holidays or large family breakfasts.
