Instructions
Preparation Steps
In a large skillet, brown the beef cubes over medium heat until nicely seared on all sides. Transfer them to a slow cooker.
Add mushrooms, onions, potatoes, beef broth, tomato paste, thyme, and garlic to the slow cooker. Stir until everything is well combined.
Cover and cook on low heat for 8 hours. Stir occasionally, checking the seasoning, and add salt and pepper as needed.
Once cooked, taste and adjust seasoning if necessary. Serve hot, optionally garnished with fresh parsley.
Notes
For a complete meal, pair the stew with a side of steamed vegetables or crusty bread. Leftovers taste even better the next day.
