  • 2 pounds boneless beef stew meat, cubed
  • 4 cups baby bella mushrooms, sliced fresh or canned
  • 2 cups yellow onions, chopped medium onions
  • 3 cups potatoes, diced peeled
  • 5 cups beef broth low sodium
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 clove garlic, minced
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Preparation Steps

  • In a large skillet, brown the beef cubes over medium heat until nicely seared on all sides. Transfer them to a slow cooker.
  • Add mushrooms, onions, potatoes, beef broth, tomato paste, thyme, and garlic to the slow cooker. Stir until everything is well combined.
  • Cover and cook on low heat for 8 hours. Stir occasionally, checking the seasoning, and add salt and pepper as needed.
  • Once cooked, taste and adjust seasoning if necessary. Serve hot, optionally garnished with fresh parsley.

Notes

For a complete meal, pair the stew with a side of steamed vegetables or crusty bread. Leftovers taste even better the next day.
