  • 0.75 cup smooth almond butter
  • 1 cup dark brown sugar packed
  • 0.5 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1.5 cups chocolate chunks divided

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan thoroughly and set aside.
  • In a medium bowl, whisk together the whole wheat flour, baking powder, and salt. Stir in the rolled oats until evenly combined.
  • In a large bowl, cream together the softened butter, almond butter, dark brown sugar, and coconut sugar until light and fluffy, about 3-4 minutes.
  • Mix in the vanilla extract and eggs until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  • Fold in 1 cup of chocolate chunks gently into the batter.
  • Press the batter evenly into the prepared baking pan. Sprinkle the remaining chocolate chunks over the top evenly.
  • Bake for 20-25 minutes, or until the edges are golden brown and the center is set. Cool completely before slicing.

Notes

Store the bars in an airtight container for up to 4 days. To make them even more delicious, consider adding a layer of jam between the almond butter and oat layers.
