Berry Oatmeal Crumble Bars: Sweet and Tart Delight

These delicious Berry Oatmeal Crumble Bars combine a buttery oatmeal crust with a sweet, tart berry filling, making them an irresistible snack or dessert!

  • 1.5 cups all-purpose flour organic if possible
  • 1 cup old-fashioned oats
  • 0.5 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.75 cup unsalted butter melted
  • 2 cups mixed berries fresh or frozen
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons cornstarch for thickening

Preparation Steps

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • In a mixing bowl, combine flour, oats, brown sugar, and granulated sugar. Pour in the melted butter and stir until the mixture forms a crumbly texture.
  • Press half of the oat mixture into the prepared baking dish to form the crust.
  • In another bowl, toss the mixed berries with lemon juice and cornstarch. Spread the mixture evenly over the crust.
  • Sprinkle the remaining oat mixture over the top of the berries.
  • Bake for 40 minutes, or until the top is golden brown and the berries are bubbling.
  • Allow the bars to cool completely in the baking dish before slicing and serving.

Notes

To add extra crunch, sprinkle some chopped nuts over the top before baking. For a sweeter touch, drizzle with honey after cooling.
