  • 1.5 pounds ground beef lean
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper freshly ground
  • 12 ounces gluten-free pasta penne or fusilli

Sauce Ingredients

  • 4 cups beef stock low sodium
  • 1 tablespoon beef bouillon granules
  • 2 tablespoons tamari sauce gluten-free
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 0.75 cup heavy cream or coconut cream for dairy-free
  • 2 tablespoons cornstarch mixed with 2 tbsp water
  • 3 cups shredded cheese blend of cheddar and mozzarella

Preparation Steps

  • Gather all ingredients. Chop the onion, mince the garlic, and shred the cheese.
  • Cook gluten-free pasta according to package directions. Drain and set aside.

Cooking Steps

  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Add chopped onions to the beef. Sauté until translucent, about 5 minutes. Add minced garlic and cook for 1 more minute.
  • In the same skillet, combine beef stock, bouillon, tamari, onion powder, garlic powder, and thyme. Bring to a simmer.
  • Reduce heat and stir in the cream and cornstarch mixture until the sauce thickens. Add in the shredded cheese and cook until melted.
  • Toss in cooked pasta and mix until evenly coated. Serve hot.

Notes

For a lighter option, use reduced-fat cheese and half-and-half. Adjust seasonings to your taste.
