Barbecue Chicken Sliders with Pineapple Salsa

Main Ingredients

  • 2 lbs chicken breasts boneless and skinless
  • 1.5 cups barbecue sauce store-bought or homemade
  • 12 slider buns preferably brioche
  • 1 cup shredded mozzarella cheese

Pineapple Salsa

  • 1 cup pineapple diced fresh
  • 0.5 cup red onion finely chopped
  • 2 tablespoons cilantro chopped
  • 0.5 teaspoon lime juice freshly squeezed

Instructions
 

Cooking Steps

  • Preheat oven to 375°F (190°C).
  • Place chicken breasts in a baking dish. Pour barbecue sauce over the chicken, covering evenly.
  • Bake in the preheated oven for 25 minutes, or until the chicken is fully cooked. Shred the chicken using two forks.
  • In a small bowl, combine ingredients for the pineapple salsa.
  • Place shredded chicken on the bottom half of each slider bun. Top with shredded mozzarella and a scoop of pineapple salsa.
  • Cover with the top half of the slider buns and serve immediately.

Notes

Add extra jalapenos to the salsa for a spicy kick!
