Banana Nut Muffins

Deliciously moist and flavorful banana nut muffins, perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas, mashed bananas
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup chopped walnuts or pecans

Preparation Steps

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  • In a large bowl, mash the ripe bananas. Stir in the granulated sugar and melted butter until well combined.

  • Beat in the eggs one at a time, then stir in the vanilla extract.

  • In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Gently fold in the chopped walnuts or pecans.

  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
