Ingredients
- 4 medium zucchini cut into fry-shaped sticks
- 1/2 cup panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 2 large eggs beaten
- 1/2 cup mayonnaise for the aioli
- 1 tablespoon fresh lemon juice for the aioli
- 1 tablespoon finely chopped parsley for the aioli
Instructions
Heat the oven to 425°F and line a baking sheet with parchment paper.
Pat the zucchini sticks dry. Set up one bowl with the beaten eggs and another with panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
Dip each zucchini stick in the egg, let excess drip off, then turn it through the Parmesan breadcrumb mixture until coated.
Arrange the coated sticks in a single layer on the prepared sheet with space between them.
Bake for 12 minutes, turn the fries carefully, and bake for 10 to 13 minutes more, until crisp and golden.
Stir the mayonnaise, lemon juice, and parsley together for the aioli. Serve the hot zucchini fries with the aioli.
