Add the apple cider, brown sugar, cinnamon stick, ginger, and nutmeg into a small saucepan. Cook over medium heat, stirring until the sugars dissolve completely.
Once dissolved, add the fresh cranberries and increase heat until the mixture begins to boil.
Reduce heat to a simmer and cook for about ten minutes, or until all cranberries have burst and the sauce thickens.
Remove from heat and let the cranberry sauce cool slightly before using.
Preheat oven to 350°F (175°C).
Place the brie wheel in a shallow baking dish. Make several small cuts in the top rind to allow flavors to penetrate.
Top the brie generously with the prepared cranberry sauce.
Bake in the preheated oven for fifteen minutes, or until the cheese is soft and melted.
Remove from oven and drizzle honey over the warm brie. Sprinkle with chopped walnuts if desired.
Serve immediately with crackers or crusty bread.
