  • 8 slices bacon cooked until crispy and crumbled
  • 1 cup shredded extra-sharp cheddar cheese
  • 0.25 cup chopped fresh chives optional
  • 1.75 cups cold buttermilk
  • 1 tablespoon melted butter for brushing

Preparation Steps

  • Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Add shredded frozen butter to the flour mixture. Use a pastry blender or fork to blend until the mix is coarse.
  • Stir in crumbled bacon, cheddar cheese, and chives, if desired.
  • Pour the buttermilk into the center. Mix gently until the dough is just combined.
  • Turn dough onto a floured surface. Fold in thirds, rotate, and repeat to create layers.
  • Optional: Wrap dough in plastic and chill for 15 minutes.
  • Roll or pat dough into a 1-inch thickness. Cut biscuits with a 3-inch cutter.
  • Place biscuits on sheets. Freeze for 10 minutes to ensure higher rise.
  • Brush biscuits with melted butter. Top with more cheese if desired. Bake for 20 minutes until golden.
  • Cool for 5 minutes before serving.

Notes

Keep ingredients cold for best results. For a dairy-free version, use vegan butter and almond milk with 1 tablespoon lemon juice.
