Avocado Mango Salad

A refreshing and vibrant salad combining ripe avocado, sweet mango, crisp vegetables, and a zesty lime dressing. Perfect as a light lunch or side dish.

  • 2 ripe avocados, peeled and diced
  • 2 ripe mangoes, peeled and diced
  • 1 small red bell pepper, finely diced
  • 0.25 small red onion, thinly sliced
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 small jalapeño, seeded and minced optional

Preparation Steps

  • In a large bowl, combine the diced avocados, mangoes, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and jalapeño (if using) to make the dressing.
  • Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  • Serve immediately or chill for up to 1 hour before serving for enhanced flavor.

Notes

For best results, use fully ripe but firm avocados and mangoes. This salad is best enjoyed fresh but can be chilled briefly before serving.
