This fresh avocado and feta dip combines creamy avocado, tangy feta cheese, and bright tomatoes with a hint of red onion and herbs. It's perfect as a dip with chips or a topping for various dishes. Quick to prepare and bursting with flavor!

  • 2 medium firm tomatoes diced
  • 1 medium avocado halved, seeded, peeled, and diced
  • 0.25 cup red onion diced
  • 1 clove garlic minced
  • 1 tablespoon fresh parsley chopped
  • 0.5 tablespoon fresh oregano chopped (or use your favorite fresh herbs)
  • 1.5 tablespoon olive oil
  • 1 tablespoon white vinegar or to taste
  • 1 pinch salt and freshly ground black pepper to taste
  • 0.5 cup crumbled feta cheese you can add more or less feta

Preparation Steps

  • In a medium bowl, combine the diced tomatoes, diced avocado, diced red onion, minced garlic, chopped fresh parsley, chopped fresh oregano, olive oil, white vinegar, salt, and pepper.
  • Mix all the ingredients together gently until well combined. Taste and adjust seasoning with more salt and pepper, if needed.
  • Add the crumbled feta cheese and gently fold it into the mixture. Be careful not to mash the avocado too much.
  • Serve immediately with your favorite chips or as a topping for grilled chicken, fish, or tacos. For best flavor, you can cover and chill it in the refrigerator for up to 2 hours before serving, but it's delicious right away too!

Notes

This dip is best enjoyed fresh. The avocado may start to brown if stored for too long, but the lime juice helps to slow this process. You can squeeze a little extra lime juice over the top before storing if you anticipate leftovers.
