Artichoke Spinach Dip

This easy, cheesy, Hot Spinach Artichoke Dip is guaranteed to be a hit at your next party. It's so delicious, no one will guess it's a lighter version!

  • 13.75 ounce artichoke hearts packed in water, drained and chopped
  • 10 ounce frozen spinach thawed and squeezed dry
  • 0.25 cup shallots chopped
  • 1 clove garlic minced
  • 0.5 cup fat-free Greek yogurt
  • 0.5 cup light mayonnaise
  • 0.67 cup grated parmesan cheese good quality
  • 4 ounce shredded part-skim mozzarella cheese
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon freshly ground black pepper to taste

Preparation Steps

  • In a small food processor, coarsely chop the drained artichoke hearts, minced garlic, and chopped shallots until well combined but still chunky.
  • In a medium bowl, combine the chopped artichoke mixture with the thawed and squeezed spinach, fat-free Greek yogurt, light mayonnaise, grated parmesan cheese, shredded mozzarella cheese, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Oven Method

  • Preheat your oven to 375°F (190°C).
  • Transfer the dip mixture into an oven-safe dish. Bake for 20-25 minutes, or until the dip is hot and bubbly, and the cheese on top is melted and lightly golden. Serve immediately.

Notes

This dip is fantastic served with tortilla chips, pita bread, or a variety of vegetable sticks like carrots and celery. For a quick alternative, you can also prepare this dip in the microwave. Place in a microwave-safe dish, cover with a vented lid, and microwave for 3 to 5 minutes until hot and cheese is melted.
