Instructions
Preparation Steps
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time.
Stir in the applesauce and vanilla extract into the butter mixture. Gradually add the flour mixture, stirring until just blended.
Fold in the diced apples. Pour batter into the prepared pan.
Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
Notes
For an extra touch, top the cooled cake with a cream cheese frosting or a dusting of powdered sugar.
