Ingredients
- 1 1/2 cups old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 cup light brown sugar packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
- 1 cup buttermilk
- 1/3 cup neutral oil
- 1 large egg beaten
- 1 teaspoon vanilla extract
- 1 medium apple peeled, cored, and finely diced
Instructions
Heat the oven to 375°F and line a 12-cup muffin pan.
Whisk the oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
Whisk the buttermilk, oil, egg, and vanilla in a second bowl, then stir in the diced apple.
Fold the wet mixture into the dry mixture just until no dry streaks remain.
Divide the batter among the muffin cups and bake for 20 to 22 minutes, until the tops spring back and a tester comes out with moist crumbs.
Cool in the pan for 5 minutes, then transfer the muffins to a rack.
